Cambridge's new local exclusive is here... The Newton!

Our new exclusive burger launches in Cambridge. The Newton is a tribute to the city’s rich academic and culinary heritage. Crafted with locally sourced ingredients, this special burger will be available exclusively at Byron’s Cambridge location.

The Newton has been carefully developed in collaboration with some of Cambridge’s finest producers. With a build of Cider Chutney, Brie, our signature beef patty, baconnasise, lettuce and red onion we're sure you're going to love it. The cheese featured in The Newton is supplied by ‘The Cheesemonger at d’Arry’s,’ a Cambridge-based artisan cheese shop specializing in luxury, British-made cheeses. Led by Perry Wakeman, a two-time Affineur of the Year, The Cheesemonger at d’Arry’s carefully selects and matures exceptional cheeses, showcasing the best of British cheesemaking. Byron are thrilled to be using British Cheese of the Year 2023, Baron Bigod, in The Newton. Baron Bigod is a traditional farmhouse Brie-style cheese, handmade at Fen Farm Dairy in Suffolk, using milk from their own grass-fed Montbéliarde cows. Renowned for its rich, creamy flavours and oozy texture, this cheese brings an indulgent touch to ‘The Newton’.

With the Bridge Street restaurant just around the corner from Newton’s Tree at Trinity College, Byron were inspired by the local culture. To honour Sir Isaac Newton’s legacy and recognising the classic pairing of cheese and apple, Byron has partnered with ‘The Cambridge Cider Company’ to create a bespoke Apple Cider Chutney, adding a sweet yet tangy depth to the burger. The Cambridge Cider Company is a boutique micro-producer dedicated to crafting fine ciders and perries from locally sourced, hand-picked fruit. Their commitment to high juice content, unfiltered and unpasteurised production, ensures an authentic cider experience that pairs perfectly with The Newton, both in the burger and as a drink to go along with it.
